I believe this depends on the model of Cisco AP you are using. The 2800/3800 series allows for a Monitor Role which sweeps the entirety of both bands while the 5 GHz radio serves clients. Chanalyzer can display spectrum data for the entire 2.4 and 5 GHz bands. You can find out more about this in this article here.
